Founded in 2013, Bellegarde Bakery’s mission is to connect the community through food and local farmers. Here everything is done by hand from the stone milling of their own flours to the baking done in a hearth oven. They source ingredients directly from producers like the salt they receive from Avery Island, Louisiana. Bellegarde Bakery is also the only company besides Tabasco to use all-natural salt in their products from Avery Island.
Graison Gill, the owner of Bellegarde Bakery, is an advocate and educator for freshly stone milled flours. He expresses the importance of whole grains for their economic and ecological impacts. In 2016 Gill wrote a Local Food Resolution (HR 113) that passed the Louisiana Legislature 92-0.
